I’m always trying to create healthier versions of food my children love and decided to make homemade fish sticks. Here is my Tilapia Fish Sticks recipe, which is a success in our house!
INGREDIENTS
1 lb Tilapia ~ 3 filets
2 eggs, beaten
1 Tbsp Wheat Germ
1 Tbsp Ground Flaxseed
2 C Whole Wheat Panko bread crumbs, divided
Spice*
*this is a personal prefernce, I used 2 tsp of a Seafood Blend that included sea salt, dill,and lemon peel. You could just use salt and pepper.
DIRECTIONS
Place Tilapia, wheat germ, ground flax seed, spice, and 1/4C of Panko bread crumbs in food processor and pulse until ground and pasty.

Place Panko bread crumbs on a plate, and beaten eggs in a bowl. Form Tilapia mixture into desired shape desired, dip into beaten egg, then into bread crumbs.

These fish sticks freeze nicely. I placed them on a baking sheet, froze them, and transferred them to a bag.
To reheat, I place on a baking sheet and and cooked in a 350F oven for 15 minutes, or until warmed through.

They are very easy! I always make a double batch and freeze. They are great for quick meals/lunches.
I am making this today! Good tip about freezing them, because I have a big bag of fish.
