I hate meal planning. It’s hard.
Hard to come up with a variety of meals that will please the whole family.
When I do make a meal everyone likes, I add it to my “online collection”,
Nothing fancy about it, just recipes I’ve tried and tasted and liked.
Now I have a group of recipes, BUT being who I am (needing organization) – I created a sheet to meal plan with, and I’ve got to say, it has made planning that much easier. And it saved me money, seriously. Usually when I go the grocery store I end up buying something I don’t need, or forgetting why I put something on my list.
Does this happen to you?
Anyway, I’ve got to say I love this sheet, and I’ve uploaded 2 versions (Meal Planner – Horizontal and Meal Planner – Vertical) for you to use.
Having the meals laid out, is making life easier, I have no stress at 4 o’clock wondering what to make.
So, what was on my Meal Plan this week?

Monday – Creamy Macaroni And Cashew Cheese
Tuesday – Quinoa Patties with Kale Salad with Toasted Coconut
Wednesday – Ravioli with Sage-Walnut Butter
Thursday – Kung Pao Chicken
Friday – Thai Red Curry Shrimp
Saturday – Penne with Green Beans, Potatoes, and Pesto
Sunday – Easy Slow Cooker Chicken Curry

I did find having the sheets was helpful, I even did 2 last week, so I’m kind of ahead!
I’m bad about meal planning – I just don’t plan ahead! But I always have ingredients on hand to make our favs, so it usually works out. Tonight is beef stew in the crockpot with ‘homemade’ classic white bread in the bread machine. yeah, I’m totally cheating ;-)

I made some changes and they were great. Thicker sauce.
I changed the amount of Almond milk to 3 cups. I actually added 2.5C to the pot with oil. With the other .5 C, I added it and the Cornstarch to a jar and shook it up. Once the oil/milk started boiling I added it to cornstarch mixture and simmered all of it for 5 mins.
Everything looks delish! My penne with sweet potatoes and arugula was yummy too! We will do that again. And it was super easy. I am just starting to meal plan. Just posting the recipes with links is helping me get organized – all the recipes are quickly at hand that way.

One of the best things I did was to do the online collection of my recipes. I can access them anywhere!

I find it so much better to have a meal plan! At 4 pm I’m not in a panic :)
