This is one cookie I love serving to my girls. It is also a great morning “grab-n-go munchie”. {And it seems lately, we’ve been having a lot of these mornings.}
As I do with most of my recipes, I’ve tweaked this one and added some wheat germ.

Total Time ~ 30 mins.
Makes about 24.
INGREDIENTS
1 cup 100% bran cereal
3/4 C milk
1 egg
1/3 C packed brown sugar (I used 1/2 this amt.)
1/4 C vegetable oil
1 tsp vanilla
1 cup all-purpose flour
1/2 cup Whole wheat flour
2 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
3/4 C shredded carrots
3/4 Craisins
1 Tbsp ground Flax Seed (my own addition)
1 Tbsp Wheat Germ (my own addition)
DIRECTIONS
In bowl, combine cereal with milk; let stand for 10 minutes.
While cereal is “standing” -
In large bowl, combine all-purpose and whole wheat flours, baking powder, cinnamon and salt; stir in carrots and raisins. (Add Flax Seed and Wheat Germ, if using)
Once the 10 minutes have passed, to the cereal/milk, beat in egg, sugar, oil and vanilla.
Add the cereal mixture to the dry ingredients and stir until just moistened.
Drop batter by rounded tablespoons onto lightly greased baking sheet; flatten slightly with fork.
Bake in 400 F oven for 15 minutes or until tops spring back when lightly touched.
Let cool on baking sheet for 5 minutes; transfer to rack and let cool completely.

I have to try this! I always send a little breakfast with Pierce to school (they have time when they first get there to eat). I usually do homemade muffins or granola bars or a quick bread, but he’d get a kick out of these!

Yum! These look great! I will try them this weekend. I think I love them just as an afternoon snack as well! So much healthier than the normal cookies for which my kids generally reach!
